This Avocado, Spinach And Lime Gazpacho Is The Perfect Springtime Recipe

A delicious gazpacho with peas, decorated like a mandala! With the beautiful weather coming, we want freshness and sweetness. This little gazpacho is perfect comfort food, with a delicious and healthy recipe.

Ingredients:

150 g of peas

60 g yoghurt

1 handful of fresh spinach

1 avocado

2 tablespoons olive oil

100 ml of water

½ lime

Salt and pepper

Preparation:

1. Cook the peas for 10 minutes in a pan of boiling water.

2. Cut the avocado in half, and recover the flesh.

3. In a blender, mix the avocado, spinach, peas, olive oil, yoghurt, lime, water, salt and pepper. The texture should be smooth and creamy.
