To have a beautiful light, puffy and crispy pizza dough, it is important to let the dough rest. Once you've mixed the flour, salt, yeast, water and oil, just let it rise in a bowl under a damp cloth for at least 2 hours. You can even make the dough the day before or in the morning if you are going to eat the pizza in the evening.
A perforated baking rack
To bake your pizza and keep it crispy underneath, it may be a good idea to invest in a perforated rack. The baking will be close to that of a pizza oven.
